Favourite Vegetables.

We have a favourite fruit topic but not a favourite vegetable one. This is blasphemy, so I will create one myself.

Vegetables lovers, please post your favourite vegetables. These are mine:

• Sweet Potatoes: a great alternative when fried compared to regular french fries, they have fiber, calcium, and vitamin A.

• Onions: versatile for many dishes.

• Lettuce, the first vegetable I could eat as a kid though not flavourful, they give foods and salads a crunchy texture that I really enjoy.

I really like broccoli a lot, it tastes really good when it's cooked properly! I don't get all the hate it gets sometimes. Peppers I don't usually see people list in their favorite vegetables ever, but they are really tasty with a little bit of ranch.

Agreed : "Potaoes" , "Green Beans",AND "any kind of Beans/Legumes".

Solid Good shared choice yet not among favorites : "Peppers".
Other yet unlisted solid good vegetables,but not favourite ones,choices : "Celery ,"Carrots" ,"Beetroot Leaves".

 :meiling:  :point: So far no one has expressed preferences or mostly preferences about (Beets, Radishes,Purple-Red Beetroots, etc.  )"Reddish-Purplish or Purplish  Vegetables".
Exceptions and Corrections as kindly and correctly pointed out by the later insight

But Sweet potatoes can be both red or purple.
I personally prefer the reddish-purplish ones that are a mix of both colours.

There's also purple lettuce. But to me it's not as good as the original green lettuce. I always just called it purple lettuce, but apparently it's called Red Italian Chicory  :cirnotan:

Broccoli is a goto.

Tofu isn't a vegetable but it's one of the most versatile foods on the planet.

Carrots are nice too ig, when cooked.

Potatoes are the best vegetable in my opinion.  Not only are they highly versatile in cooked dishes, they also have an extremely high ratio of calories per acre needed to grow them.  The introduction of the potato from the Americas caused rapid population growth in Europe, and it has remained a staple of the diets of many populations around the world. 

Onions are also delicious; they've got a strong flavor that becomes very sweet when cooked and they work great in a variety of dishes. 

Carrots are also good either on their own or cooked with other foods.

When I was a kid cucumbers used to be my favourite food, and while that's not really the case anymore I'd still say that cucumbers are my favourite vegetable. At the very least it's absolutely my favourite when had by itself.

Carrots are only good raw, potatoes are only good as chips. I have no opinion on onions, when my wife makes pasta dishes with onion in them I can barely taste the difference.

In defense of onions and potatoes. Potatoes also have some good variations. I just ate some mashed potatoes with canned tuna for lunch and it was really good. Baked potatoes are also delicious, especially loaded baked potatoes where you can put different toppings depending on your tastes. I can understand why people wouldn't really feel anything about onions, garlic pretty much steals the show in terms of flavour potence. They don't really stand out in flavour when used with meats and pastas. Big Onion has pretty much influenced everyone into using onions on basically every main course ever when they don't really add anything substantial, only an aromatic enhancement. But they do work really well in terms of flavour when used in pizzas and sandwiches. Onion rings are also good, I recommend you try them out.

I do however agree on your point with carrots, there really aren't any good carrot recipes that I like out there. I've tasted carrot soup, cake, cream .etc but they've never really hooked me, a lot of them take away the crunchiness of carrots that I like and they just end up having this weird flavour that I don't like.

So now I don't have many good memories associated with them despite the fact that I know they can be good because I've made food with them myself.
Potatoes are only good when boiled or as chips, crisps, or wedges. But I find it a bit tough to take away points for that since many vegetables are prepared in similar ways.
If we count Culinary Vegetables (As opposed to Botanical ones) then Peppers steal the show for me.

How does flour with Piri Piri taste like? What do you make with it?

I don't think I'll ever be able to handle any type of spicy above a jalapeño. Even though my country is known for the Habanero, we don't really have any culture of eating spicy foods so I haven't really trained my tongue for them.

Well, my uncle always made(and still makes) stupidly good foods, so I've had a lot of vegetables to try-

My favorite would likely just be carrots, they're good raw and cooked, they have plenty of preparation methods, go good with most spices, and they're colorful!(the best part of it all)

I had some carrot cake once. It tasted nothing like carrot, which is the main reason why it was edible at all.

I once had some carrot cake made from a mix in a box rather than from fresh carrots, so the shredded carrot in the mix was dried.  I thought it would regain some moisture in the baking process, but the bits of carrot in the final product were still quite hard and it wasn't the most pleasant thing to have hard bits of carrot stuck in your teeth. 

Moral of the story:  Use fresh carrots in carrot cake!

Mine are or would be, also by parts(also ITAlian), of the genus Rosemary, Oregano,Thyme, and( surely  inserted in ITAly from mostly EU gretaer area but not originally, or if so more or less lost in time) Nutmev
